Matcha Chia Pudding

Matcha is one of the highest sources of antioxidants, possessing as much as twenty times more antioxidants than pomegranates or blueberries. Because of this, we are always on the lookout for creative ways to incorporate more of nubeleaf’s Matcha Green Tea Powder into our diet, and not just by drinking it as a tea. We love the recipe below and the addition of chia seeds to this recipe adds fiber and protein which makes this pudding a nutritious treat!

This is a great recipe to prepare ahead and enjoy the next day for breakfast or as an after dinner dessert.

 

The Recipe

1 1/2 cups nut milk

1/2 tsp of nubeleaf’s Organic Matcha Green Tea powder

⅛ tsp cardamom

1 tsp coconut butter

1 tbs hemp seeds

1/4 cup chia seeds

1/3 mashed banana

Splash of vanilla

Salt

Toppings: nut milk, goji berries, and pistachios

Matcha Chia Pudding
 

Directions:

Blend or whisk together the nut milk, matcha, cardamom, coconut butter, banana, vanilla, and salt. Mix in seeds and stir until it starts to thicken. If your nut milk is very cold, the coconut butter will solidify. Blending instead of whisking will help to create a more consistent texture. Refrigerate overnight or until set. Add extra nut milk, goji berries, and pistachios.
